According to Kellogs, all you need to make Rice Krispies is butter, marshmallows and rice krispies cereal.. but would it still work not using butter to reduce the fat and calories? Could water or milk be substituted?
just leave out the butter and use no stick butter flavored spray, melt 4 cups of mini marshmallows with about 8 seconds worth of spray, then melt for about 2 minutes, stir in 6 cups of rice crispies, then use butter spray on your hands, pan ect. : )

For the original you need butter, the real stuff, no substitutions.
But there are variations...
Peanut Butter Rice Krispy Treats
You will need:
* 6 cups Rice Krispies
* 1 cup sugar
* 1 cup white Karo syrup
* 1 cup peanut butter
Combine sugar and syrup in a sauce pan. Bring to a boil and remove from heat. Add peanut butter, Rice Krispies, and mix.
Pour into a greased 9 X 13 inch pan or a cookie sheet for thinner bars. Press down, let cool. Cut into squares.

Peanut Butter, Butter Scotch Rice Krispy Treats
* 1 cup sugar
* 1 cup Karo Syrup
* 1 cup peanut butter
* 6 cups Rice Krispies
* 1/2 cup butterscotch chips
* 1 cup chocolate chips
Measure out peanut butter and Rice Krispies.
In medium sauce pan over high heat combine sugar and Karo Syrup. Bring to a boil, stirring constantly. Add peanut butter and continue heating until peanut butter is melted and mixture is smooth. Remove from heat. Add Rice Krispies and mix well. Pour into 9″ x 13″ baking dish. Cover hands in butter to protect from heat and pat down mixture evenly into the pan.
In a double broiler over high heat, melt butterscotch and chocolate chips, stirring constantly. Spread chocolate mixture over Rice Krispies. Wait 30 minutes before eating.

I ran across this recipe that uses Butter Buds. Never used that brand before and don't know much about it. I know its made from real butter but goes through other processes. Check it out before you use to determine if using real butter is better. Sometimes using the real thing is just like using the substitute. The recipe I found also calls for some vanilla. You should try and and let me know.
nonstick cooking spray
7 cups mini marshmallows
3 tablespoons Butter Buds
2 tablespoons water
1/4 teaspoon vanilla
1/4 teaspoon salt
6 cups Rice Krispies
Directions
1Lightly coat a large nonstick saucepan or pot with cooking spray.
2Add the marshmallows, butter buds, water, vanilla, and salt to the pan and set over med/low heat. Stir constantly until completely melted. Remove from heat.
3Add rice krispies and stir until completely coated.
4Spray a 9x13 inch baking pan with cooking spray. Pour the rice krispies mix into the pan. Moisten your hands and press the mixture into the pan until flat.
5When the mixture cools completely, cut 4 times down and 4 across, making 25 bars.
62 Points per serving (1 bar).

you could always use a vegan butter substitute. smart balance brand has 80 calories, 2.5g saturated fat, 6.5g good fat, 0g cholesterol, 90mg sodium. Its good to bake with too!
I think the reason for the butter is so that the marshmallows don't stick/burn to the pan, so if you substitute, it would definitely need to be something that could serve the same purpose.

ive never tried it-but i imagine it would taste awful-why dont you try it? i think the biggest problem would be that the marshmallows would burn in the pan-who knows?

I think you can just leave out the butter all together. It should work but be really stickey. You can maybe try a little batch of it to see if it works. If not try using low fat butter?

Try using a 7 oz jar of marshmallow fluff. Use cooking spray on your hands to keep them from sticking too much, and also on the pan.
